Casareep (Eatables)
A thick, black sauce use to make pepperpot. A staple of almost all of Guyana's Amerindian people, it is made from the distilled juice of grated bitter cassava. The juice is boiled for several days until it is thickened; other ingredients are then added. Casareep is essentially a preservative.
